CHEF GREGORY'S NOTES: Potato Leek Bisque is one of my all-time favorite dishes to eat and to cook. It’s one of the first recipes I was taught to make in a professional kitchen. It’s a perfect dish served warm for these cooler evenings. The bisque is made with russet potatoes, leeks, onions, garlic, white wine, reduced cream and vegetable stock. Once everything is cooked and blended, it takes on a silky smooth texture full of richness. The house cured salmon will be baked and adds a mild saltness that completes the dish. CHEF GREGORY'S NOTES: This is a classic fish stew from the south of France. First we make a broth from crushed tomatoes, toasted saffron and a hint of citrus peel. Next we give the seafood a quick sear and then add it to the broth so it all cooks together before finishing the stew with fresh fennel fronds. We are also serving a traditional condiment called rouille on the side. (Insider Note: I suggest toasting a couple slices of our par-baked bread and spreading the rouille on the toast to enjoy with your soup just like the locals would do.) Aromas of red fruits, dried cranberries and jammy youthful fruits come immediately to the fore, with perfumed Grenache and rose petal floral aromas. A solid core of dark red fruit and spicy fruit surrounded by youthful tannins. The overlying presence of Grenache flavors initially impact the palate, followed by a finish complete with hints of jam, cocoa and dark berry contributions of Syrah and earthy Mourvèdre.

2016 Happy Canyon "Piocho" Bordeaux Red Blend ~ $26

(Santa Barbara County) Winemaker's Notes: Aromatically, the wine is uplifting, with notes of dark cherries, earth, cedar wood, raspberries, and plums. On the palate the wine is richly concentrated, beautifully focused, with deep-set dark cherry, chocolate, cedar flavors, complimented with black olive and fine-grain tannins. The wine continues with red and black plums, saddle leather, berries and dusty tannins. The wine is wonderful to drink today and will continue to evolve in balance, length and complexity as the more structured Cabernet Sauvignon matures. This wine will continue to develop and excel over the next ten years.

Moderate plus viscosity with slow forming, slightly stained tears. Highly aromatic with ripe black cherry and cassis fruit, vanilla and cinnamon spice with cedar, graphite, dried autumn leaf and licorice notes over an attractive toasted oak background. Dry, full-bodied with ripe, complex black fruit of cherry and blackcurrants layered with baking spice on the entry. The mid palate has continuing ripe fruit with savory dried leaf elements, cedar, anise, camphor and a bit of cocoa surrounded with firm, chewy tannins and sweet spice notes that add complexity as the palate evolves. (Santa Barbara County) Winemaker's Notes: Nose of juicy fruit, honey and ripe melon. Pleasantly sweet yet not cloying attack of more ripe fruit nicely balanced with rich Meyer lemon acidity in the evolution and long finish. Will age gracefully through 2020 developing nectar-like aromatics and becoming richer and even more honeyed. A well-balanced dessert wine that pairs well with fruit salad, custardy desserts like creme brulee, or salty cheeses.

(Spain) Dense and velvety, and caramel in color, this wine is an explosion of raisins, dry figs and honey. It can be used for reduction sauces and for baking yet it is an excellent accompaniment to blue cheese, poured over vanilla ice cream or served alone.

NV Yalumba Antique Tawny (375ml) ~ $19

(Australia) Winemaker's Notes: This outstanding old dessert wine is deep tawny in color, with an aroma featuring dried fruits, caramel and spices with elegant brandy spirit and hints of wood aged rancio. The palate is richly flavored featuring chocolate and caramel with fine spirit characters and persistent aftertaste of dried fruits and nutty nuances. The texture is sweet and smooth with roundness from the wood maturation and brandy spirit filling out the middle palate and providing the firm, drying finish.
